What is the Japanese Cheesecake?

Japanese Cheesecake is very popular outside of Japan. If you get a chance to visit Japan, I highly recommend trying this cake when you are exploring all the foods the country has to offer.

There are three types of cheesecakes in Japan:

  • Baked Cheesecake

  • Rare Cheesecake

  • Soufflé Cheesecake

Ingredients:

  • 1 Tbsp unsalted butter

  • 6 large eggs (50 g each w/o shell)

  • 10.6 oz cream cheese

  • 4 Tbsp unsalted butter

  • ¾ cup heavy (whipping) cream (¾ cup + 4 tsp to be precise)

  • 4 ½ Tbsp sugar

  • ⅔ cup cake flour

  • ½ leinkmon

  • 2 Tbsp lemon juice

  • ½ cup sugar

  • 2 Tbsp apricot jam

  • 2 tsp hot water

For the exact steps of baking the cheescake go to this link: https://www.justonecookbook.com/souffle-japanese-cheesecake/

“The only way cheese is dessert is when it's followed by the word cake.”
